Eating Healthy can be a challenge- sometimes you just need to be creative. We are trying to eat less and our dinners are not full 3 course meals typically. I’m finding that simple Ritz crackers can be a good foundation for what can turn into a meal or snack worth replicating and improving upon. Ritz crackers with cream cheese is a good base to start with – you can literally add anything that your imagination can dream up. I love bell pepper ring cut from the small bagged bell peppers that are available in most stores, we love to shop at Costco when we can and generally buy a couple of bags of small colored mini bells.
