On our road trip in the summer of 2021 we visited 17 states over about 40 days. We drove our Lexus 450H and took our two elderly dogs on the adventure with us – what a fun trip and what a great way to see the country. Utah was really a great state with more to offer than we could really take advantage of but one of the memories that seemed right out of history was the Thunderbird Restaurant in Mount Carmel near the virgin River – it’s sign is classic and the food was great – I hadn’t seen Strawberry Rhubarb Pie on a menu for years so of course we had to try a piece (Nancy had never heard of such a delight) and it lived up to its reputation- it was a delicious dessert which helped fuel us for the journey ahead – finding iconic little Restaurants along our trip was seemingly one of the highlights each day – 🤣🤣
